      Maybe you can mix water with a little sugar. So please add 1 tbsp of Water instead of Mirin and increase the amount of sugar to about 2 teaspoons instead of 1/2 tablespoon.

    Hi I just wanted to ask is there a clear miso soup or drink. I saw someone on a RUclips video order a Katsu don and it came with a miso soup and Al saw a young lady order about 4 miso soups that looked clear to me the young lady 2as in a sushi restaurant where you help yourself off a conveyor belt and they count the plates and colour for the bill Many thanks steve 👨🏼‍🦽

      There is no clear miso soup. But maybe the clear soup you saw is something like "Sumashi-jiru". Sumashi-jiru is a traditional Japanese clear soup made with dashi broth, seasoned with salt and soy sauce.

    HELP needed: Looking at cooking asian including japanese cooking. My friend and I know what to get in terms of dashi, mirin etc, but some of your recipes use miso paste as a base. We both dont know much about miso, I prefer to eat sweeter or lightly savoury foods than bitter types of food. So if i was going to start with miso what would you recommend. Miso does come in so many types, but my store really only has red or white, if you give me a specific brand I can try around me I am in australia. Any help appreciated.

      @ishtar990 - the white miso has a lighter taste, while the red one tastes stronger. It depends on how robust you want your miso flavor to be. I tend to use red for strong flavored meats and veggies (like beef, pork, cabbage, eggplant), and white for soups and light flavor meats and veggies (mild fish, shrimp, scallops, chicken, etc).

    Yes, Somen is available overseas ( France ) at least in this time, I bought a package and ate them in days they were very delicious but I didn't do the dish right I kinda when how I wanted, at least I knew they were supposed to eat them cold, eat them a lot during last summer

    I’m from Europe and if somebody of my family members watch it, maybe he can fall out of chair. Because as a breakfast we usually eat sandwiches, fried eggs with bread of something else fast and not so healthy like this. I always wondered how Japanese people have so much time to cook food like this. And an another problem is that I can’t find over a half of this products in the shops of my city.       Haha I didn't know cats love katsuobushi. So cute! The recommended storage method is to deaerate the dried bonito flakes to remove the air in the bag, and freeze the flakes in small single-serving packages. In addition to reducing the number of times the dried bonito flakes come into contact with air, this also reduces the risk of oxidation, since the flakes are assumed to be used up when they are used, and the bags are never opened again.
